- 1 cup almond flour
- 4 large eggs
- 1 cup shredded cheddar cheese
- 2 tablespoons cream cheese, softened
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh chives, chopped
- 2 tablespoons butter, melted
Preheat your waffle maker to medium-high heat. Let it get really hot for about five minutes.
Mix the almond flour, baking powder, garlic powder, onion powder, salt, and pepper in a medium bowl. Whisk everything together well.
Beat the eggs in a separate large bowl until they’re slightly frothy. Add the cream cheese and melted butter, then whisk until smooth.
Pour the dry ingredients into the wet ingredients. Stir gently until just combined.
Fold in the shredded cheese and chopped chives. Don’t overmix—a few lumps are totally fine.
Spray your waffle maker with cooking spray or brush with a little oil. Pour about 1/3 cup of batter into the center.
Close the lid and cook for about four to five minutes. The waffle should be golden brown and crispy around the edges.
Remove carefully with a fork or silicone spatula. Repeat with the remaining batter.
Serve immediately while hot, or let them cool completely before freezing for later.
