- 1 cup raw almonds
- 1 cup pitted Medjool dates
- ½ cup unsweetened shredded coconut plus extra for rolling
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- 1 tablespoon chia seeds optional
Step 1: Toss the almonds into your food processor. Pulse until they're roughly chopped but not turned into flour. You want some texture.
Step 2: Add the dates, half cup of coconut, almond butter, vanilla, and salt. Process until everything sticks together when you pinch it. This takes about 30 seconds.
Step 3: If you're adding chia seeds, pulse them in now. They add a nice nutritional boost.
Step 4: Scoop out tablespoon-sized portions and roll them into balls with your hands. Slightly wet hands make this easier.
