Ingredients
  

  • 1 cup raw almonds
  • 1 cup pitted Medjool dates
  • ½ cup unsweetened shredded coconut plus extra for rolling
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • 1 tablespoon chia seeds optional

Instructions
 

  • Step 1: Toss the almonds into your food processor. Pulse until they're roughly chopped but not turned into flour. You want some texture.
  • Step 2: Add the dates, half cup of coconut, almond butter, vanilla, and salt. Process until everything sticks together when you pinch it. This takes about 30 seconds.
  • Step 3: If you're adding chia seeds, pulse them in now. They add a nice nutritional boost.
  • Step 4: Scoop out tablespoon-sized portions and roll them into balls with your hands. Slightly wet hands make this easier.
  • Step 5: Roll each ball in the extra shredded coconut until coated. This sugar-free snack looks so pretty with that coconut coating.
  • Step 6: Pop them in the fridge for at least 30 minutes to firm up. Store them in an airtight container in the fridge for up to a week.
